All of this while catching up on Project Runway. Then blogging later.
I’m a sucker for vegan brunch, so today I cut up some potatoes, sweet onions, baby portabella mushrooms and red and orange peppers, fried them all up with Italian seitan, seasoning it with garlic, black pepper and red pepper. I topped it all off with some avocado and a side of black berries and strawberries.
I only eat plant-based products. Still obese. Oh well.
A heaping scoop of Trader Joe’s Soy Creamy Cherry Chocolate chip vegan ice cream in a waffle bowl covered in melted semisweet chocolate chips and toasted almonds. My apartment is officially the epicenter of the vegan obesity epidemic.
Perfect description for it though. Certain aspects will probably feel similar to “home” but never will quite be home again. Although gyro’s by UC or chili in Clifton are suddenly tasty tonight. :\
Oh my God, people here do not know about chili on spaghetti. Do you know they just eat it? Like plain, not even on anything. And they don’t even have chili parlours. And they act like chili is a seasonal food. It’s so weird.
On a non-chili related note, no where will ever be home. I miss something that is no longer tangible.
But Skyline does help. Especially because the Clifton one got a fryer. That means chili fries.
I didn’t make it exactly to the recipe, but it is definitely inspired by the one in Veganomicon. But you know I never follow recipes. They are an inspiration, barely guidelines.
Dinner consisted of baked sweet potatoes and this delicious sandwich, filled with pomegranate, red onion, red pepper, campari tomatoes, avocado, Vegenaise and dijion mustard. Yum!
